This is an option when vegetables and fruits are compatible (apples with cabbage, carrots, pumpkin, beets are compatible); slightly sweet, which means it’s not suitable for dinner. But good for lunch and snack: red cabbage, green apple, celery stalk, carrots, parsley or cilantro, cranberries, seeds, lemon juice, flaxseed oil.
There are quite enough root vegetables for vegetable salad in winter. When we complain about the lack of vegetables in winter, it is worth recognizing the fact that tomatoes and cucumbers have the property of cooling the body, like all watery fruits. Nature is wise. All root vegetables have a unique property – to have an antibacterial and antifungal effect on the gastrointestinal tract (due to the presence of phytoncides). But it is in winter that most of us, more than ever, lean on everything floury, refined, and sweet; we feed the “pathogen”, in a word. And if it were not for the tough antibacterial vegetable sponge made from root vegetables, it is easy to imagine how difficult it would be for our microflora and cucumbers and tomatoes would not be of any help in such a situation.
