Ingredients:
- 1 cup bulgur (or couscous)
- 2 large fresh parsley, finely chopped
- 1/2 cup fresh mint, finely chopped

- 2 small cucumbers, finely chopped
- 1 red onion, finely chopped
- 1/4 cup olive oil
- Juice from 2 lemons

- Cooking bulgur: Pour boiling water over the bulgur in a bowl and leave for 10-15 minutes until it has absorbed all the water and is soft. Then place in a sieve to remove excess water.
- Preparing vegetables: Finely chop the parsley, mint, tomatoes, cucumbers and onions. The smaller you chop the vegetables, the more delicious the salad will taste.
- Mixing ingredients: In a large bowl, combine prepared bulgur with chopped vegetables. Add olive oil, lemon juice, sea salt and cayenne pepper. Mix thoroughly.
- Let sit: To allow the flavors of the ingredients to fully develop, leave the salad in the refrigerator for at least 30 minutes.
