Variety of Tastes
The most amazing thing about Suritsa is its variety of tastes. It depends on the ingredients you decide to use. Leaves of wild strawberry, mint, raspberry, tarragon, apple tree, yarrow, currant – the list is endless. Each of them will add its own unique aroma and taste to your Suritsa.
Recipe:
- Take a three-liter jar and fill it with herbs, filling it about one-third full. You can choose one herb or create your own combination.
- Pour spring water (or just good quality water) over the herbs and add 150 g of honey.
- Cover the jar with gauze and leave the drink in bright sun for three days. This is important – the sun should be part of the process!
If the days are hot, the leaves can be removed after two days. If it’s the other way around, you can leave it a little longer.
Winter Variation:
In winter, Suritsa can be prepared using dried herbs. Just leave them on the table or in the kitchen. Then remove the herbs and Suritsa is ready to eat.
